Meet the Founder
Lavinia Doan is the founder of LAV Sushi, a private sushi catering business that also offers classes and omakase experiences in Houston, Austin, and Dallas.
Lavinia studied at the University of Alabama and started her career in the energy industry. While on a work rotation in the Permian Basin, she began making sushi for friends and coworkers because good sushi was hard to find, and that side project grew into LAV SUSHI. She later earned her MBA from The Wharton School as part of the Class of 2026 and used that time to keep growing the business, including expanding into Dallas.

Why did we start Lavsushi?
“I take the time to really make it very customized. That way they get to make exactly what they want in my class. And truthfully, there's infinite possibilities of different rolls you can make in my class with all the different options I have”

“Versus your big-box grocery store sushi fish, we're really partnering with top-tier fishermen and top-tier suppliers, and really making sure that they're getting the best flavor from fish to plate as possible.”
